I am always trying to recreate meals to make them a bit more nutritious. This my healthy take on the husband’s beloved hamburger helper. He was a big fan!
Healthy Hamburger Helper
Ingredients
1tbsp olive oil
1 lb ground beef
1/2 cup of uncooked lentils
1 medium yellow onion, finely chopped
1 large carrot, finely chopped
4 tbsp tomato paste (or ketchup in a pinch)
1 tsp paprika
1 tsp onion owder
1 tsp garlic powder
1/2 tsp black pepper
2 cups of beef broth
1 cup of crushed tomatoes
1 box of chickpea pasta, (my box was 8.8 oz)
1/2-1 cup of cheddar cheese
Directions:
-Add olive oil, onions, carrots to a large skillet. Sauté for 5 minutes until softened. Add in ground beef and break up. Add in the salt, black pepper, garlic powder, and paprika.
-Cook lentils according to package directions in separate pot.
-Cook pasta according to package directions in a separate pot.
-Add in tomato paste (or ketchup) and crushed tomatoes to skillet and stir together.
-Add in lentils, cooked pasta, and beef broth. Let simmer for 5-10 minutes.
-Remove from heat and stir in the cheese.
